[RECIPE] HEALTHY LOCKDOWN BAKE UP 🍌

Hi Lovelies!

We hope you are all going well and looking after yourselves during lockdown. We are so proud and stoked to see the commitment and contribution to our Winter Wellness Challenge. You all made steps to look after your physical, mental and spiritual wellbeing during these testing times, and embraced the opportunity. It was also a fantastic way to stay interacting with you all via the YYS Facebook Community, because we genuinely miss you all so much!

We had fun filming this LIVE Bake-Up as part of the challenge, and thought we would re-share these 2 SIMPLE & HEALTHY snack recipes, which both only require one bowl!

One of our lovely Winter Wellness ‘challengers’ Ella, provided us an eye-opening insight as a part of the ‘Eco Friendly’ challenge element; most single bananas in the supermarket end up in landfill. We thought that was a pretty sad waste to learn about, so we thought we’d go and snatch up a couple of them solo nanas at our local fruit and veg grocer and put them to good use.

If you have kids, these are both a perfect healthy treat to chuck in their lunchbox when school returns, or keep those cheeky monkeys satisfied during homeschooling!

I have been making a conscious effort lately to have healthy home-baked snacks for our kids ready to go… because for some odd reason home school seems to turn children into eating machines! I will admit, I may have noticed the same concept applies for adults working from home too (guilty).

We hope you enjoy having a bake-up if you try these recipes, and please give us a tag if you share online! HEALTHY CHOC BANANA MUFFINS

  • 2 cups almond meal

  • 2.5 bananas

  • 3 free range eggs

  • 1/4 cup coconut oil

  • 4 medjool dates

  • 1 teaspoon baking powder

  • 2 tablespoons cacao powder

  • 50g dark chocolate

  • 2 tablespoons cacao nibs

METHOD

  1. Preheat oven to 180°C. Lightly spray or coat inside of a standard muffin tray with coconut oil.

  2. Blend 2 bananas with all ingredients (except dark chocolate + cacao nibs) to form a batter.

  3. Transfer to a bowl and fold through the chocolate chunks.

  4. Spoon mixture into tray. decorate the tops with remaining banana and cacao nibs.

  5. Bake for 30-35 mins depending on oven.

ONE BOWL BANANA COOKIES

  • 2 ripe bananas

  • 1 cup rolled oats (or quinoa flakes)

  • 1 teaspoon olive oil

  • 2 tablespoons coconut flakes

  • 1 teaspoon cardamon (ground)

METHOD

  1. Preheat oven to 180°C

  2. Mash banana completely with a fork. Add all ingredients together until well combined.

  3. Spoon into 12 teaspoon sized balls.

  4. Place on a lined baking tray and gently squash down to flatten into a disc.

  5. Bake in oven for 20-25 minutes on the middle shelf. Allow to cool slightly before serving. (note:1 serve is 3 cookies).
